Ingredients

  • 1 1/2 cups grated zucchini (about 1 medium zucchini)
  • 1 cup almond butter
  • 1/3 cup honey or maple syrup
  • 1 large egg (or a flax egg for vegan alternative)
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • Optional: 1/4 cup chopped nuts (walnuts, pecans)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  2. Squeeze grated zucchini in a clean towel to remove excess moisture.
  3. In a large bowl, mix almond butter, honey/maple syrup, egg, and vanilla extract until smooth.
  4. Stir in oats, baking soda, cinnamon, and salt. Fold in zucchini and chocolate chips (and nuts, if using).
  5. Spread the mixture evenly in the prepared pan. Bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Allow to cool before cutting into bars.

Notes

  • For a vegan version, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water).
  • These bars can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week.
