- 1 1/2 cups grated zucchini (about 1 medium zucchini)
- 1 cup almond butter
- 1/3 cup honey or maple syrup
- 1 large egg (or a flax egg for vegan alternative)
- 1 teaspoon vanilla extract
- 1/2 cup rolled oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- Optional: 1/4 cup chopped nuts (walnuts, pecans)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
- Squeeze grated zucchini in a clean towel to remove excess moisture.
- In a large bowl, mix almond butter, honey/maple syrup, egg, and vanilla extract until smooth.
- Stir in oats, baking soda, cinnamon, and salt. Fold in zucchini and chocolate chips (and nuts, if using).
- Spread the mixture evenly in the prepared pan. Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool before cutting into bars.
Notes
- For a vegan version, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water).
- These bars can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week.
