  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • 1 package refrigerated pie crusts (or homemade)
  • 1 egg (for egg wash)
  • Coarse sugar (optional, for sprinkling)

Instructions

  1. Prep the Apples: Preheat your oven to 375°F (190°C). Toss the diced apples with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, and cornstarch. Set aside.
  2. Cook the Filling: Melt the butter in a skillet over medium heat. Add the apple mixture and cook until tender and thickened, about 5-7 minutes. Let it cool.
  3. Prepare the Dough: Roll out the pie crusts on a floured surface. Cut out circles with a round cookie cutter.
  4. Assemble the Cookies: Place a spoonful of apple filling on half of the dough circles. Top with another dough circle and seal the edges with a fork.
  5. Bake: Place cookies on a parchment-lined baking sheet. Brush tops with egg wash and sprinkle with coarse sugar if desired. Bake for 15-18 minutes or until golden brown.
  6. Cool and Serve: Let the cookies cool on a wire rack before serving.
