- 2 tablespoons cornstarch
- 1 tablespoon butter
- 1 package refrigerated pie crusts (or homemade)
- 1 egg (for egg wash)

Instructions
- Prep the Apples: Preheat your oven to 375°F (190°C). Toss the diced apples with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, and cornstarch. Set aside.
- Cook the Filling: Melt the butter in a skillet over medium heat. Add the apple mixture and cook until tender and thickened, about 5-7 minutes. Let it cool.
- Prepare the Dough: Roll out the pie crusts on a floured surface. Cut out circles with a round cookie cutter.
- Assemble the Cookies: Place a spoonful of apple filling on half of the dough circles. Top with another dough circle and seal the edges with a fork.
- Bake: Place cookies on a parchment-lined baking sheet. Brush tops with egg wash and sprinkle with coarse sugar if desired. Bake for 15-18 minutes or until golden brown.
- Cool and Serve: Let the cookies cool on a wire rack before serving.
