Instructions
- Prepare the Cheesecake Filling: Beat cream cheese with sugar until smooth. Mix in egg and vanilla until combined. Set aside.
- Make the Cupcake Batter: Preheat oven to 350°F. Mix flour, sugar, cocoa, baking soda, powder, and salt. In another bowl, mix buttermilk, oil, eggs, and vanilla. Combine wet and dry ingredients, then stir in hot water.
- Assemble the Cupcakes: Fill liners halfway with batter. Add a dollop of cheesecake filling, then cover with more batter. Bake for 18-22 minutes. Cool before serving.
