  • 1/2 cup vegetable oil
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup hot water

Cheesecake Filling:

  • 1 package (8 ounces) cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Cheesecake Filling: Beat cream cheese with sugar until smooth. Mix in egg and vanilla until combined. Set aside.
  2. Make the Cupcake Batter: Preheat oven to 350°F. Mix flour, sugar, cocoa, baking soda, powder, and salt. In another bowl, mix buttermilk, oil, eggs, and vanilla. Combine wet and dry ingredients, then stir in hot water.
  3. Assemble the Cupcakes: Fill liners halfway with batter. Add a dollop of cheesecake filling, then cover with more batter. Bake for 18-22 minutes. Cool before serving.
