  • Author: Marie Lavigne
  • Total Time: 30 minutes
  • Yield: 24 sandwich cookies 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • For the Filling:
      • 1/2 cup unsalted butter, softened
      • 2 tablespoons heavy cream
      • 1 teaspoon vanilla extract
      • 3 cups powdered sugar, sifted
      • Pinch of salt

Instructions

  1. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  2. In a large bowl, cream butter and sugar until light. Add eggs one at a time, then vanilla.
  3. Gradually blend in dry ingredients. Split dough, roll out, and chill for 1 hour.
  4. Preheat oven to 350°F. Cut chilled dough into circles and bake for 8-10 minutes.
  5. For filling, beat butter, cream, and vanilla. Add powdered sugar and salt until fluffy.
  6. Assemble cookies with filling in between. Chill before serving for best texture.

Notes: For a vegan variant, substitute butter and cream with plant-based alternatives. Adjust the sweetness of the filling to taste, and ensure all ingredients are at room temperature for best results.
