- 3 cups powdered sugar, sifted

Instructions
- In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In a large bowl, cream butter and sugar until light. Add eggs one at a time, then vanilla.
- Gradually blend in dry ingredients. Split dough, roll out, and chill for 1 hour.
- Preheat oven to 350°F. Cut chilled dough into circles and bake for 8-10 minutes.
- For filling, beat butter, cream, and vanilla. Add powdered sugar and salt until fluffy.
- Assemble cookies with filling in between. Chill before serving for best texture.
Notes: For a vegan variant, substitute butter and cream with plant-based alternatives. Adjust the sweetness of the filling to taste, and ensure all ingredients are at room temperature for best results.
