Smoky Bacon Cheddar Grilled Cheese Bake is a comforting twist on the classic grilled cheese sandwich. This dish combines sourdough bread, crispy bacon, gooey cheddar, and smoked paprika for a casserole that’s as easy to make as it is delicious.

- 8 slices sourdough or country bread
- 4 tablespoons butter, softened
- 1½ cups shredded cheddar cheese
- 6 strips bacon, cooked crisp and crumbled
- ½ teaspoon smoked paprika
- 1 cup shredded mozzarella cheese
- 1 cup heavy cream
- 2 large eggs
Instructions
- Butter one side of each bread slice. Place 4 slices (butter-side down) in a greased 9×13-inch baking dish.
- Sprinkle the bread evenly with cheddar, crumbled bacon, and smoked paprika. Top with mozzarella and the remaining 4 slices of bread (butter-side up).
- In a bowl, whisk together heavy cream and eggs. Pour this mixture evenly over the bread. Let it soak for 10-15 minutes.
- Cover the dish with foil and bake at 375°F for 20 minutes. Remove foil and bake an additional 10-15 minutes until golden and bubbly.
- Slice into squares and serve warm.
