- 1 cup unsalted butter, room temperature
- 2/3 cup granulated sugar
- 1/3 cup cocoa powder, sifted
- 2 cups all-purpose flour, sifted
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips (for melting)
- 1/4 cup heavy cream
- Assorted fillings (jam, chocolate ganache, Nutella)

- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Gradually mix in the cocoa powder, flour, and salt until well combined. Stir in the vanilla extract.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet. Press down the center of each ball with your thumb.
- Bake for 12-14 minutes, or until the edges are firm. Remove from the oven and let cool.
- For the filling, heat the heavy cream in a saucepan over medium heat until it simmers. Pour over the chocolate chips and let sit for a minute before stirring until smooth.
- Fill the thumbprints with the chocolate mixture or your choice of filling.
- Let the cookies set before serving.
Notes
For a personal twist, experiment with the fillings – try using your favorite jams, Nutella, or even a peanut butter filling for a delightful variation.
